PERUVIAN TIRADITO | CHURROS
You could compare Tiradito to Ceviche; both are fresh, raw seafood dishes “cooked” by citrus juice. Tiradito uses more subtle charms to bring the sweet, raw fish into focus. Of course the key to good Tiradito is the freshness of the fish. In Peru Chefs are telling a joke that the “fish must have been sleeping in the sea the night before, and still wearing its pajamas when served.”
